Easy Banana Bread Recipe (Quick Banana Muffins Using Ripe Bananas)
If you’re looking for an easy banana bread recipe to use up ripe bananas, this is my go-to. It’s quick, foolproof, and perfect for baking on cosy mornings. I recently made these muffins while wearing our Copenhagen fleece - perfect for weekends (and weekdays!).
You can make this as a banana loaf or turn it into banana muffins for a faster bake. This recipe is inspired by my sister’s own version and a classic Mary Berry banana bread - and the best part is that you can add all the ingredients at once. No separating wet and dry. Just mix, bake and enjoy.
Ingredients for Easy Banana Bread
- 3 ripe bananas
- 1 cup self-raising flour
- 1 cup sugar (white, brown, caster — any works)
- 2 eggs
- 2 tbsp butter
- 1 tsp baking powder
- 2 tbsp milk
- Optional flavour additions: cinnamon, nutmeg, vanilla extract or chocolate chips
Method: How to Make Banana Bread
- Place all ingredients into your mixer at the same time.
- Mix until smooth and combined - don’t worry about technique, this recipe is intentionally simple.
- Pour into a loaf tin or divide into a 12-cup muffin tray.

Baking Instructions
- Fan oven: 180°C
- Bake time: 20–30 minutes
- Bake until golden brown and a skewer inserted in the centre comes out clean.
Loaf vs Muffins
You can bake this recipe as a traditional banana bread loaf, but I personally prefer banana muffins - they bake faster and are perfect for sharing fresh from the oven.
